Orange Honey Gingerbread

Halfway between bread and cake, the gingerbread recipe goes back a long way: its ancestor, honey bread, was already known to the Egyptians and Greeks in ancient times! Now associated with eastern France, it is traditionally enjoyed during the end-of-year celebrations, perhaps accompanied by a good mulled wine or foie gras. But for those who love it, it can also be enjoyed all year round! Here, it is orange blossom honey that perfumes the gingerbread instead of the usual orange zest, but if you feel like it, you can add some of the latter for even more flavor.

The ingredients

  • 250 g orange blossom honey
  • 250 g flour
  • 100 g caster sugar
  • 1 sachet of baking powder
  • 1 sachet of vanilla sugar
  • 1 tsp powdered ginger
  • 1 tsp. allspice
  • 1 tsp grated nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp green anise
  • 2 eggs
  • 10 cl of milk

The preparation

Step 1

Preheat the oven to 160°C (gas mark 5-6). In a bowl, place the wheat flour, baking powder, caster sugar and vanilla sugar, green anise, grated nutmeg, cinnamon and ginger. Mix with a wooden spoon.

Step 2

Heat the orange blossom honey in a saucepan or in the microwave. Pour it very hot onto the mixture of flour, sugar and spices. Stir again and gradually add the whole eggs. Then gradually pour in the lukewarm milk. Mix until you obtain a smooth and homogeneous dough, neither too liquid nor too thick. Do not hesitate to readjust the mixture with flour or milk if necessary.

Step 3

Pour the mixture into a well-buttered and floured cake tin. Bake your honey gingerbread and let it cook for 1 hour to 1 hour 15 minutes. To check if your gingerbread is cooked, stick a knife in it: the blade should come out dry.

Step 4

Unmold the gingerbread when it has completely cooled. Wait at least 24 hours for your orange honey gingerbread to be ready to eat.

Step 5

To make your orange honey gingerbread even more spectacular, you can decorate it with dried oranges, cinnamon sticks or cloves. Guaranteed success!
