4 spring recipes featuring our Mielifruits
Spring means light, colorful, and quick-to-prepare dishes. Here's how to turn your Mielifruits into true culinary allies.
Recipe n°1: Raspberry Mielifruit Chia Pudding
This recipe is ideal for a complete breakfast or a healthy dessert.
Ingredients (for 2 people):

4 tablespoons chia seeds

250 ml cow's milk or plant-based milk

2 generous tablespoons Raspberry Mielifruit

A few fresh raspberries and pistachio slivers for garnish
Preparation:

In a bowl, mix the milk and Raspberry Mielifruit until the mixture is smooth.

Add the chia seeds and stir everything.

Let it rest in the refrigerator for at least 4 hours (or overnight); it's very important to allow the chia seeds time to swell.

Before serving, stir the pudding again. If the texture is too firm, add a splash of milk.

Divide the mixture into verrines, arrange fresh raspberries, and sprinkle with crushed pistachios for crunch.

Recipe n°2: "Sunshine" Lemon Cake
Ingredients (for 4 people):

150g flour (T55 or T65)

5 generous tablespoons Lemon Mielifruit (2 for the syrup)

2 whole eggs
-
60g salted butter (melted and cooled)

1/2 packet baking powder
-
1 plain yogurt (125g) for moistness
Preparation:

Preheat your oven to 170°C. In a bowl, whisk the eggs with the Lemon Mielifruit. The mixture will become slightly frothy and take on a beautiful golden hue.

Then add the plain yogurt and melted butter. Mix well until a smooth texture is obtained.

Incorporate the sifted flour and baking powder. Gently mix with a spatula to avoid overworking the dough (this is the secret to a well-risen cake).

Pour the mixture into a greased mold (approximately 18-20 cm for 4 people).

Bake for 35 to 40 minutes. Check for doneness with a knife blade: it should come out clean.

Take the cake out of the oven and let it cool slightly before tasting.
Chef's tip:
For extra indulgence, make a quick soaking syrup right out of the oven. To do this, mix 1 teaspoon of Lemon Mielifruit with 2 tablespoons of hot water. Pour the syrup over the top of the cake; it will absorb the moisture from the preparation, making it even moister.
Recipe n°3: Almond and Blackcurrant Mielifruit soft cake
In spring, light and fruity flavors are more appreciated, which is why in this third recipe, we offer a pastry without butter (replaced by almond flour and honey).
Ingredients (for 4 people):

2 tablespoons Blackcurrant Mielifruit (for the dough) + 4 teaspoons (for the core)

100g almond flour
-
20g flour (or cornstarch for a gluten-free version)

2 egg whites
-
1 pinch of salt
-
A few slivered almonds for garnish
Preparation

Preheat your oven to 180°.

In a bowl, mix the almond flour and flour. Add the 2 tablespoons of Blackcurrant Mielifruit. Mix well: the almond flour will absorb the honey's moisture, and the purplish color of the blackcurrant will begin to tint the mixture.

Then, beat the egg whites with a pinch of salt until stiff. Be careful not to overbeat them; they should remain soft. Gently fold them into the previous mixture using a spatula to avoid breaking the structure.

Fill your molds halfway, then place a teaspoon of Blackcurrant Mielifruit in the center of each mold. Then cover with the rest of the dough.

Sprinkle with a few slivered almonds and bake for 12 to 15 minutes.

Let cool for a few minutes, then enjoy. The almond biscuit will be very tender, and the center will reveal an intense flow of honey and fruit.
Recipe n°4: Blackcurrant Mielifruit mocktail
We couldn't offer you this article without suggesting a refreshing and chic drink for your first aperitifs on the terrace.
Ingredients (for 1 glass):

1 generous tablespoon Blackcurrant Mielifruit

60 ml coconut milk (from a carton, very fluid)
-
2 green cardamom pods (or a pinch of ground cardamom)
-
10 ml lime juice for balance
-
Sparkling water to lengthen
-
Crushed ice
Preparation:

In a shaker (or a large jar with a lid), place the Blackcurrant Mielifruit and the previously crushed cardamom seeds, also add the lime juice.

Then pour in the coconut milk and shake vigorously for 15 seconds. The Mielifruit will perfectly bind with the fat of the coconut milk to create a very creamy purple foam.

Fill a "coupette" type glass or a tall glass with crushed ice.

Filter the shaker mixture over the ice to remove the cardamom seeds, then top with a splash of sparkling water for a kick.
All that's left is to enjoy your mocktail with friends or family.
