These brambles generally thrive in various environments such as hedges, forest edges, embankments, wastelands, and can form large clumps. They quickly colonize forest clearings and slow their growth in undergrowth due to the lack of light.
In some regions of the Pyrenees, particularly in the Madres massif, wild raspberries are abundant. Raspberry flowers are an attractive source of pollen and nectar for bees. The nectar secretion, which is particularly abundant, varies on average from 3 to 6 mg per flower per day, and can even reach 30 mg, with a sugar concentration varying from 15 to 45%. The flowering period extends over a long period, and it is not uncommon to find both fruits and flowers on the same plant. In addition to providing generous nectar, the raspberry plant also produces abundant pollen that bees easily collect, forming gray to greenish-white balls.
Focus on raspberry honey
Raspberry honey is a creamy light honey with a delicate floral taste. It is very soft in the mouth, with a creamy texture and a discreet flavor, it has many virtues for the body. 1. Duck fillet, honey sauce, raspberries and port

Preparation time: 20 minutes
Ingredients :
- 1 duck fillet
- 125 g raspberries
- 5 cl of Port
- 1 tbsp raspberry honey
- 1 shallot
- 1 clove of garlic
- Butter
- Herbs and spices
Preparation steps:
For the sauce:
- Start by sweating a chopped shallot with a chopped clove of garlic.
- Then add the raspberries and a good tablespoon of raspberry honey.
- For about ten minutes, let your preparation reduce until the raspberries are reduced to a compote.
- Then add the port and let reduce again for 5 minutes.
- For a clean and creamy sauce, blend your preparation before passing it through a sieve to remove the raspberry seeds.
For the duck breast:
- Pan-fry the fillets with butter (to which you can add herbs, spices, garlic...whatever you want) for 3 to 4 minutes on each side for a nice coloring on the outside and a tender and pink center.
2. Apple-pear fondant with honey and raspberry coulis
Ingredients :
- 50 g raspberry honey
- 3 beautiful apples
- 3 conference pears
- 250 g raspberries
- 1 lemon
- 8 mint leaves
- 1 tablespoon of sugar (for the coulis)
Preparation steps:
- Squeeze the lemon and keep the juice in a salad bowl.
- Peel the apples and pears, cut them in half lengthwise and remove the seeds.
- Then cut them into 1 cm cubes and mix them with the lemon juice. Set aside. Preheat the oven to thermostat 7 (210°C).
- Heat the honey in a frying pan. When it has melted, add the apple-pear mixture without the lemon juice. Let it caramelize slightly. Then pour the mixture into a dish and continue cooking in the oven for about ten minutes. The fruit should be soft.
Raspberry coulis:
- Wash the raspberries and blend them. Pass the coulis through a sieve. Add a little lemon juice and a tablespoon of sugar.
- Mold the apple-pear fondant in a ramekin (or a cookie cutter) and unmold onto a plate.
- Pour the coulis around and decorate with the mint leaves.
3. Honey and raspberry financiers
Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients :
- ½ tsp salt
- 5 large egg whites
- 150g raspberry coulis
- 75g of sifted fluid flour (type 45)
- 30g sifted icing sugar
- 12.5 cl of raspberry honey
- 180g of ground almonds
- 100g caster sugar
- 115g butter cut into small pieces
Preparation steps:
- Preheat the oven to 180°C. Oil mini muffin trays (I used a silicone mini muffin pan)
- Place the butter in a small saucepan. Melt over low heat for 6 to 7 minutes, until it is hazelnut-colored, stirring frequently with a whisk. Carefully pour in the honey and whisk to combine. Remove from heat and keep warm.
- Place the ground almonds, caster sugar, icing sugar, flour and salt in the bowl of a food processor. Beat at low speed. Add the egg whites one by one and mix briskly. Wait until one egg white is well incorporated before adding the next one and scrape down the sides of the bowl if necessary.
- Reduce the speed and pour in the honey mixture in a thin stream. Mix for 45 seconds at high speed until the dough is smooth.
- Pour the batter into the molds, filling them halfway. Pour a small spoonful of raspberry coulis in a dot near the edge of the cake. Place the tip of a toothpick in the middle of the dot and pull towards the center of the cake to form the point of the heart.
- Bake for 15 to 20 minutes, until the edges are golden brown. Let cool for 5 minutes, then place them on a rack and let cool for a few moments.
