What is flower honey made of?

Flower honey is a hive product abundant in trace elements. However, due to the fact that it is a polyfloral product, precisely discerning its various virtues and benefits remains a challenge!

What is known is that flower honey is full of mineral salts, such as phosphorus, calcium, iron, magnesium and potassium.

Flower honey contains many vitamins, aids in the digestion of other foods, and encourages the beneficial retention of magnesium and calcium.

What exactly is flower honey?

The term "flower honey" includes polyfloral honeys, shaped by bees over the seasons and foraging territories. They are not dominated by a particular plant to the tune of more than 80%.

Thus, we discover seasonal honeys, among which spring honey, a blend of acacia, boxwood, rosemary, lime, and fruit trees in general. On the other hand, summer honey turns more towards honeysuckle, lavender , sunflower, or even bramble. Each of these honeys reveals a unique bouquet of flavors, capturing the floral diversity of each season and each terroir.

Flower honey draws its nectar directly from flowers foraged by bees. It is thus different from honeydew honey, which comes from foraging on the secretions produced by aphids on tree leaves. Among the most famous representatives of this category are Fir ,Forest and Mountain honeys, each bringing its own charm and taste identity.

A catalyst for its environment, flower honey captures the season of its production and the essence of the environment in which it comes to life. Unlike mono-floral honeys, flower honey is often distinguished by its glucose content higher than that of fructose, which has the effect of accelerating its crystallization.

When is it collected?

Typically, flower honey is harvested towards the end of summer, often during the month of August. A late-season harvest thus brings together a multitude of essences, true reflections of a specific season and terroir. The composition of flower honey actually relies almost entirely on the expertise and know-how of the beekeeper. It is he who orchestrates this symphony of flavors by intervening with precision to offer a honey that will capture the unique essence of the season and the region.

Flower honey is the epitome of natural honey that bees make during their travels. Each jar of flower honey holds a surprise, revealing changing flavors with each tasting.
