Madeleine with fir honey

With today's recipe we take you back to your childhood, not with Proust's madeleine, but rather a recipe for a madeleine with fir honey. This honey with a woody and aromatic taste will add a unique and full-bodied flavor to the sweetness of the madeleine.

The ingredients

To make around twenty madeleines you will need:

  • 2 eggs
  • 30 g sugar
  • 40 g of fir honey
  • 90 g flour
  • 3 g baking powder
  • 1 pinch of salt
  • 90 g butter

The preparation

Step 1

Melt the butter then let it cool.
Add the honey.
Mix the eggs with the sugar and a pinch of salt.
Add the flour sifted with the yeast.

Step 2

Add the butter and honey mixture until the dough becomes smooth.
Cover with cling film and leave to rest in the refrigerator for at least an hour. 

Step 3

Heat the oven to 200-220°C.
Using a piping bag or a small spoon, pour the batter into buttered metal or silicone madeleine molds, ¾ high.

Step 4

Bake for about fifteen minutes until the madeleines rise and turn golden. Leave to cool on a rack.

Step 5

You can now enjoy your madeleines with fir honey and make room for your beautiful memories!

Madeleines can be stored for 1 to 2 days in an airtight container after making them.
