For this, what better than honey to enhance your dishes? Used since ancient times in medicine as well as in cooking, it is the perfect product to express your love. Today, we invite you to step into the kitchen and create a complete menu from start to finish, honoring our grandmothers.

Why is honey the perfect companion for celebratory meals?

Before moving on to the recipes, let's look at this noble product. Including this ingredient in your preparations doesn't just mean replacing sugar; it's much more than that: it adds aromatic depth, a creamy texture, and unique culinary alchemy.

A natural flavor enhancer 

Unlike white sugar, which has a neutral taste with no particular flavors, honey has a certain complexity. Its flavors vary depending on the flowers foraged by the bees. It can be fresh and minty with linden honey, rather woody and bitter with chestnut honey, or fruity and floral with lemon blossom honey. Even if each honey has its own specific characteristics, generally speaking, this gold from the hive acts as a flavor enhancer that enhances, softens, or reveals the character of foods.

The magic of caramelization 

When cooked, honey has hygroscopic properties, meaning it has the ability to retain moisture, allowing for delicious dishes and incredible textures. For example, it helps keep meat tender while creating a glazed crust. For vegetables, it enhances their flavor while lightly caramelizing them during cooking.

The Starter: Roasted Camembert with Flower Honey and Rosemary

To kick off this meal honoring our grandmas properly, what better than a shared starter? Roasted Camembert is a classic, but honey brings sweet and gourmet flavors, taking the dish to a whole new dimension.

Ingredients (for 4 people):

  • 1 beautiful Camembert cheese

  • 3 tablespoons of spring honey

  • 1 sprig of fresh rosemary

  • A handful of walnut kernels

  • A few slices of country bread

Preparation:

  1. Preheat your oven to 180 °C (350 °F).

  2. Take your Camembert and, using a knife, score a crosshatch pattern on the top rind of the cheese.

  3. Tuck a few rosemary needles into the slits.

  4. Generously drizzle the top with your honey: thanks to the scoring, the honey will perfectly seep into the cheese.

  5. Bake for about 15 to 20 minutes, until the center is runny and the top is lightly golden.

  6. Once out of the oven, sprinkle with crushed walnuts for crunch.

The Main Course: Glazed Pork Tenderloin with Chestnut Honey

After a gourmet starter, it's time for the main course. Pork and honey are a historical pairing. Chestnut honey will perfectly complement this meat: with its distinctive notes, it subtly enhances the sweetness of the pork.

Ingredients (for 4 to 6 people):

  • 1 pork tenderloin (approximately 600g to 800g)

  • 4 tablespoons of chestnut honey

  • 2 tablespoons of soy sauce

  • 1 teaspoon of freshly grated ginger

  • A drizzle of olive oil and a knob of butter

  • Accompaniment: 800g of carrots with their tops and 2 oranges

Preparation:

  1. In a bowl, prepare the glaze by mixing the honey, soy sauce, and ginger.

  2. In a Dutch oven, brown the pork tenderloin on all sides with the butter and oil.

  3. Once the meat is browned, lower the heat and brush it with half of your honey mixture.

  4. Add the halved carrots around the meat and pour in the juice of the two oranges.

  5. Cover and simmer over low heat for 25 minutes.

  6. Every 10 minutes, baste the meat with the cooking juices. This is the secret to glazing: repetition.

  7. At the end of cooking, remove the lid and increase the heat for 2-3 minutes to reduce the sauce until it becomes syrupy.

Dessert: Proust's Madeleines with Honey and Lemon Zest

To end the meal beautifully, we invite you to go back to childhood with madeleines, symbols of nostalgia.

Ingredients:

  • 3 fresh eggs

  • 100g brown sugar

  • 2 generous tablespoons of acacia honey

  • 150g flour

  • 125g melted butter (brown butter is even better)

  • 1/2 sachet of baking powder

  • The zest of one organic lemon

Preparation:

  1. Whisk the eggs, sugar, and honey until the mixture lightens in color. Liquid acacia honey helps achieve a very moist crumb.

  2. Add the flour and baking powder, then the cooled melted butter, and finally the zest.

  3. The crucial step: Let the dough rest in the refrigerator for at least 2 hours (or overnight). The thermal shock between the cold dough and the hot oven creates the hump.

  4. Preheat your oven to 210 °C (410 °F). Fill your molds three-quarters full.

  5. Bake for 5 minutes at 210 °C (410 °F), then reduce to 180 °C (350 °F) for another 5 minutes.
