What is the origin of Grandmother's Day?

Grandmother's Day is a convivial celebration that honors our grandmas. It was initiated recently, in 1987, as part of the "Grandmothers' Day" association created by the coffee brand from Roubaix, Café Grand'Mère. The primary objective was to reinforce the brand's friendly image by associating it with feelings, tenderness, and love. Although initially a marketing initiative, it has established itself in the hearts of the French and has thus become a real tradition, just like Mother's Day.

Every first Sunday of March, our grandmas become the stars of the day. This is how we reward our grandmothers with small gestures of affection. Flowers, personalized gifts from the heart, or homemade treats – everything is planned to give our grandmas the most beautiful day possible, filled with conviviality and love.

To celebrate this holiday with family and recall fond memories, there's nothing better than a complete meal made with good products such as our honeys and jams.

Why is the celebration held on the first Sunday of March?

The month of March represents the arrival of spring, the return of fine weather, and sunshine. It is a transitional period from winter to summer, symbolizing renewal and a new chapter.

The return of flowers and sunshine also signifies a desire to gather, so what better way to start the month than with a warm moment around a good homemade meal?

Honey for a sweet and gourmet day

In addition to its sweet and fruity taste, honey is also a health ally, notably due to its low glycemic index. It is also considered a natural remedy for many ailments, helping, for example, to fight against small winter bacteria.

Let yourself be tempted by a warm menu where honey will sublimate each dish with its sweetness and delicate aromas. Honey, a natural treasure with many facets, brings not only an irresistible sweet touch but also incomparable nutritional richness. From appetizer to dessert, your grandmas will ask you for all the recipes!

For a successful meal that will make everyone's mouth water, we suggest the following menu.

Appetizer: A delicious warm goat cheese salad softened with our delightful fir honey.
Main Course: Tender pieces of avocado honey-marinated chicken served with a light sweet potato mash.
Dessert: Crispy tartlet with jam and almond cream

Warm goat cheese salad and fir honey

For 4 people
Preparation time: 10 minutes
Cooking time: 10 minutes

Let your taste buds dance to the strong notes of fir honey combined with the sweetness of goat cheese. Subtle and slightly salty, the latter will pair wonderfully with this rare honey. Its woody and resinous notes will add character to this appetizer.

Ingredients:

  • 100g arugula

  • 50g mesclun or seasonal young shoots

  • 1 handful grated beetroot

  • 1 handful walnuts

  • 4 goat cheese logs

  • 1 seasonal pear such as Conference pear

  • 1 tablespoon olive oil

  • 1 teaspoon balsamic vinegar

  • 1 teaspoon mustard

  • Salt and pepper

Preparation

1. Preparation of goat cheeses

Start by preheating your oven to 180°C. Place the cheeses on a baking sheet lined with parchment paper. Drizzle each log with fir honey. Then bake for 10 minutes. The preparation is ready when the cheese begins to brown and melt.

2. Salad preparation

While the warm goat cheeses are baking, prepare your base. Start by washing and draining your salad mix. Take a large salad bowl and add the greens. Then grate the pear and beetroot into thin slices for a sweet touch.

3. Prepare the vinaigrette

In a bowl, mix the mustard, olive oil, and balsamic vinegar together. Then add salt and pepper. For more sweetness, we advise you to also add a spoonful of honey.

4. Plate up

It's now time to plate up. You can arrange 4 plates and fill them with a generous portion of salad. Then add the walnuts and vinaigrette, not forgetting the most delicious part: the warm goat cheeses.

For more color and flavor, we recommend decorating your plate with a few sprigs of thyme or fresh coriander.

Marinated chicken and sweet potato

For 4 people

Marinating time: 1 h
Cooking time: 30 min

Ingredients

For the marinated chicken:

  • 4 chicken fillets

  • 2 tbsp soy sauce

  • 2 tbsp olive oil

  • 2 tbsp avocado honey

  • 1 tsp grated ginger

  • 1 clove minced garlic

  • Juice of half a lemon

  • Salt, pepper

For the sweet potato mash:

  • 600 g sweet potatoes

  • 20 g butter

  • 10 cl milk

  • Salt, pepper, nutmeg

For the finishing touches:

  • A few sprigs of coriander or parsley

  • Sesame seeds

Preparation

1. Marinade preparation

In a bowl, mix soy sauce, avocado honey, olive oil, garlic, ginger, and lemon juice. Don't forget to add salt and pepper. Then cut the chicken fillets into thin slices and place them in the mixture. Finally, refrigerate for 1 hour.

2. Mash preparation

Start by peeling and cutting the sweet potatoes into pieces. Then steam them or boil them in salted water for 20 minutes. They will be ready when they are tender. Mash them with a fork, then blend them with butter and milk. You can then season your preparation with nutmeg, salt, and pepper.

3. Chicken cooking

Take your marinade out of the fridge and sear your chicken strips in a hot pan for about 7 minutes on each side over medium heat, checking regularly. The strips will be ready to be removed from the heat when they are caramelized by the honey.

4. Plating and tasting

Arrange 4 plates, spoon a few tablespoons of sweet potato mash, add the chicken slices and the reduced marinade. Finally, you can enhance your mash with a few sprigs of coriander and sesame seeds.

Why use avocado honey in your dishes?

Originally from Mexico, avocado honey offers unique flavors. It is easily recognizable by its liquid texture and very dark, almost black color. Avocado honey is one of the most suitable honeys for sweet and savory preparations due to its woody and caramelized notes.

In this recipe, it reveals all its richness by coating the chicken with a subtle sweetness and balancing the sweetness of the sweet potato.

Crispy tartlet with jam and almond cream

For 4 tartlets

Preparation time: 25 min
Cooking time: 15 min

Ingredients

For the tart bases:

  • 70 g brick pastry sheets

  • 30 g melted butter

  • 1 tsp honey

For the almond cream:

  • 55 g almond powder

  • 25 g almond honey

  • 30 g soft butter

  • 2 tsp milk

  • 1 egg

  • 2 tsp flour

For the topping:

  • 4 tbsp cherry jam

  • 20 g crushed hazelnuts

  • 1 tbsp honey for the caramel

Preparation

1. Preparation of tartlet bases

Preheat your oven to 180°C. Cut the brick pastry sheets into squares and layer 3 sheets, brushing them with melted butter. Then place them in tart molds and add a drizzle of almond honey. Bake for 7 minutes until they are crispy.

2. Preparation of almond cream

Mix the almond powder and flour together. Then add the honey, egg, butter, and milk, mix well. Fill the tart bases with this mixture and bake for 8 minutes.

3. Preparation of hazelnuts

In a pan, caramelize the crushed hazelnuts with honey over low heat. Then, place them on parchment paper to let the honey set.

4. Assembly and finishing touches


Take the tartlets out of the oven and wait a few minutes for them to cool. Then spread a generous spoonful of cherry jam, not forgetting the hazelnuts.
