Linden honey: origin and benefits

The lime tree, an imposing tree of valleys and mountains, displays its fragrant flowers, giving a nectar prized by bees. A symbol of longevity since Antiquity, the lime tree is the origin of lime honey.

The origins

The linden tree is an imposing tree that can reach between 10 and 30 meters in height, and that you have probably often seen in various environments, such as forests, villages and roadsides. Its exceptional longevity, which can exceed 500 years, has made it a symbol since Antiquity, particularly in Germanic mythology where it was considered sacred. However, it is the medicinal virtues and taste qualities of its flowers, which display yellow to green hues, rich in nectar and pollen, and give off a persistent fragrance, which are recognized worldwide. As for linden honey, it offers a range of colors ranging from white to amber depending on the quantity of honeydew, and is distinguished by a powerful flavor and a slightly minty taste.

The harvest

The small-leaved lime tree, prized by beekeepers, is distinguished by the aromatic finesse of its leaves, which enhances the flavor of the honey produced. However, the flowers of the lime tree, although delicate, are sensitive to weather hazards. Excessive variations in rainfall or drought can therefore considerably shorten the harvest period, leading to minimal nectar returns. Lime honey, described as monofloral, requires that at least 80% of the nectar comes from lime flowers to bear this name. The general flowering period extends between the beginning and the end of June, although some regions may experience early starts. The honey flow, the period during which the bees collect the nectar in the supers of the hive, occurs between mid-June and mid-July, but its duration is limited to a few days.

The characteristics

Linden honey, very fragrant, seduces with its fragrance, with menthol and woody aromas, reminiscent of the undergrowth where a large part of its harvests are carried out in the middle of the forest. Its flavors are described as intense, powerful, persistent, making it a honey with character. Contrary to its strong character, it is revealed to be non-acidic, although a slight hint of bitterness can be detected. In short, linden honey offers a sweet, fragrant flavor, enhanced with a subtle astringency and a touch of infusion of linden flowers, providing an intense and lasting balsamic taste in the mouth. Linden honey is distinguished by its pronounced aroma, bringing a distinct freshness to the mouth. Some even say that its fragrance is captivating. Its notes are marked by menthol aromas, marked by the nuances of the undergrowth. This is hardly surprising given that most of the harvests are carried out in the heart of the forest. The flavors of honey are described as intense, powerful and persistent.  This is a typical honey from the Paris basin. The Chantilly forest is probably the French forest with the highest density of lime trees. Moreover, one of the explanations often given for the origin of the name Chantilly comes from the Latin "campus tiliae", meaning "field of lime trees".

Like sunflower honey, a creamy linden honey requires mixing with a small percentage of seed. This seeding, carried out with carefully selected honey, gives linden honey a semi-compact texture characteristic of creamy honeys. In general, seeding represents between 5 and 10% of the total amount of honey. Thus, a creamy monofloral honey will include a small proportion of another type of honey.

How to consume it?

Linden honey is distinguished by its remarkable, persistent and surprising minty aroma, which evokes the undergrowth of linden trees in spring. But when and how to consume it?

  • It is perfect for sweetening hot drinks, such as herbal teas, teas or coffees.
  • It is ideal for enhancing the taste of fruits, especially oranges, peaches, apricots and melons. Also try applesauce with lime honey!
  • It also has culinary surprises in store, blending perfectly into exotic or sweet and savory dishes, for example to enhance the flavor of lamb jus.
  • Finally, simply spread on bread, it is fresh, delicious and quick to prepare.

Linden honey: benefits

Linden is rich in active ingredients because it contains:

    • Flavonoids: These are water-soluble pigments (which dissolve in water). They are antioxidants. The flavonoids contained in linden leaves are quercetin and kaempferol.
    • Mucilage, a plant substance rich in water-soluble fibers capable of balancing intestinal transit.
    • Tannins, phenolic substances of natural origin that have antioxidant properties that act against cellular aging. Tannins also have an astringent action.
    • Polyphenols which promote the increase in HDL levels (good cholesterol), as part of a balanced diet.
    • Caffeic acid which protects cells against oxidative stress, responsible for their aging. It also has anti-bacterial and anti-fungal properties.
    • Farnesol essential oil, a fragrant acyclic alcohol naturally present in many plants.

This makes lime honey a nectar with many virtues:

  • It is a remedy with soothing and calming, digestive, antimicrobial and anti-inflammatory properties. It is suitable for nervous people.
  • It has a recognized use in treating insomnia disorders. These compounds act on the receptors in the brain responsible for sleep.
  • It is very effective in treating the first symptoms of angina, fever and colds. In fact, in traditional medicine, linden flowers are used in infusion for their diaphoretic effect to help feverish and cold patients sweat. Linden honey also has this power. It is therefore recommended to mix linden honey with flowers and/or lemon to treat respiratory disorders (bronchitis, rhinitis).
  • It has a prebiotic effect. It helps to nourish the good intestinal bacteria, thus promoting their growth and strengthening their action on the intestinal flora.
  • Rich in tannins with antioxidant properties, it acts against cellular aging and has an astringent action.
  • Due to its nutritional composition, it helps reduce deficiencies, by providing nutrients to increase energy in the body. Which is an asset to fight against states of fatigue, anemia, asthenia.
  • It has a low glycemic index, ideal for people looking to regulate their blood sugar levels.

Pear and Linden Honey Cake Recipe

Ingredients for 6 people:

  • 1 egg
  • 1 tbsp linden honey
  • 30 g sugar
  • 1 yogurt
  • 2 small Swiss cheeses
  • 30 g butter
  • 160 g flour
  • 1 packet of baking powder
  • 1 tsp vanilla powder
  • 4 small pears, cut into thick slices (peeled and lemoned)
  • 5 small pears, halved (peeled and pitted)
  • 1 tbsp granulated sugar
  • 1 knob of butter

Preparation:

  1. Turn on the oven to 180°
  2. Rinse the pears, peel them and squeeze the lemon juice over them, then cut 4 into thick slices and 5 into halves, remove the seeds and set aside.
  3. Mix the egg and sugar, add the lime blossom honey and mix well.
  4. Then add the softened butter, the fromage blanc and the yogurt, and mix well.
  5. Then add the flour, yeast and vanilla, then mix until you obtain a smooth, creamy, light and airy dough.
  6. Line a 22 cm mold with baking paper, then butter it generously.
  7. Pour half of the dough and spread it carefully.
  8. Sprinkle the entire surface with pear slices, then cover with the other half of the dough, making sure that the pears are well covered.
  9. Finally, place the pear halves evenly after having cut them finely without going all the way to the end.
  10. Then sprinkle the entire surface (dough and pears) with sugar.
  11. Place a small knob of butter on each pear half, then bake for 15 to 20 minutes maximum (as soon as the top is golden, take the cake out of the oven)
  12. Leave to cool in the mold, then unmold onto a plate, taking care to remove the baking paper.
  13. Once cooled, sprinkle the pear cake with icing sugar and serve with lime blossom honey.
  14. All you have to do now is enjoy your pear cake with the sweet flavor of lime blossom honey!
