Linden honey is a finely granulated creamy honey. Its color varies between off-white and dark yellow depending on its degree of crystallization and its harvest region. Its smell is delicate and its flavor is persistent, sweet, sometimes slightly bitter, without acidity. The most interesting aspect of its taste is this sensation of minty freshness revealed at the end of the mouth.

Our bees mainly forage on the lime trees of the Côte d'Or, Picardy and Loire. The lime tree generally blooms at the end of June depending on the weather conditions. This honey is harvested at the beginning of July. However, the date of this harvest and the quantity of honey obtained depend greatly on the weather conditions.
