Fir honey, made from honeydew, is one of the few honeys that does not come from flowers. Honeydew is a thick, viscous liquid substance excreted by certain insects, usually aphids. Due to its unique composition, Fir honey, a 100% natural product, has a liquid texture, a dark color, and a woody, resinous flavor with marked aromatic notes.
The harvest of this honey depends on the relationship between the bees and the sucking insects that excrete the sap of the fir tree, it is therefore irregular and unpredictable which makes it rare and special.
The harvest takes place in July, sometimes in August, and for only a few days. If aphids and other insects have been very active, it may even continue until autumn. The plant sap contained in this honey is rich in trace elements (magnesium, iron, copper), which strengthens your body.
